When I was a kid, we would go to the Greentree Festival in Kirkwood.One of my favorite food booths was always the one that made the pepper bellies.

You slice open a bag of Fritos. Pour in some chili, sprinkle some cheese and add some onions, sour cream and jalapeños to top it off. It’s perfect for a chilly fall day.

At home, I make frito pie. The same, but usually don’t have jalapeños or sour cream stocked.

Today, I went to make a frito pie for the family for a football snack and thought hey, I have jalapeño poppers in the freezer. Let’s pop those in the airfryer and eat those, too! Hubby liked the idea but asked if I could cut up the poppers and put it on the Frito Pie. I thought that was a fantastic idea! So that’s how we came up with a Popperbelly.

This was absolutely perfect! The poppers added a creaminess and a little kick.

PopperBelly

Ingredients:
Fritos
Chili
Cheese (shredded or Velveeta)
Frozen Jalapeño Poppers

Optional:
Onions
Black olives
Sour Cream

Directions :
Cook your frozen jalapeño poppers to your liking. Cut into fourths. (I do an airfryer at 350 for 7-8 minutes)

Heat up some chili (microwave or stove top)

Crush up some Fritos and add to the bottom of your bowl.

Add hot chili

Then cheese
A couple of Fritos for crunch
Add your poppers
Add onions, black olives, sour cream (optional)

Enjoy!

Fish Stick Pizza w/Chipotle Ranch Drizzle ~ Just try it before you say “ew” ~ #Recipe

Quarantine has caused to be creative with our daily lives. When you’re running low on food and don’t want to leave the house, go through what you have and see what you can make.

A month or so ago, I decided to experiment with a few things I had in the freezer. My boys were game to try it. They love my fish tacos, so I wanted to try a Fish Stick Pizza. I know it sounds weird but it was so delicious. Just try it once.

I grabbed a frozen Red Baron Cheese Trio Pizza, a box of fish sticks (I used the store brand) and some onions (fresh or frozen). And then to top it off, I make my Chipotle Ranch and drizzled it over the pizza.

To Prep:

Preheat oven per instructions on pizza box.

Break frozen fish sticks into two or three pieces/per stick and sprinkle around pizza.

Add onions.

In a small bowl, mix ranch and ground chipotle. The more chipotle you add, the smokier it will be. Put in fridge until it’s time.

* I make my own ranch with the Hidden Valley Ranch Seasoning

Fish Stick Pizza w/Chipotle Ranch Drizzle

Ingredients:
One frozen cheese pizza
Frozen fish sticks
Diced onions, fresh or frozen

Sauce:
Ranch
Ground Chipotle

Directions
Bake per instructions on your pizza box.

Mine is 400 degrees for 17 minutes

When done baking, drizzle the ranch over the pizza and add some to a side cup. You may want to dip.

**Note: different brands for fish sticks and for the frozen pizza may result in a different taste. The brand of ranch may also result in a different taste. I feel that I have a winning combination with the products listed above.

@Redbaronpizza Cheese Trio is my favorite frozen #pizza ! Must keep it stocked in my freezer at all times.

This is a Red Baron frozen pizza house. We have tried so many other brands and the whole family agrees that it is Red Barron.

Recently, my husband bought a couple of the Cheese Trio pizzas. I immediately fell in love. This is now my favorite Red Baron pizza. The three cheeses: are so perfect by themselves or to use as a delicious base. I have added pepperoni and sliced black olives and it was heavenly.

Beef and 2 Bean Chili ~ #chili #recipe #azebraslife

We are in Day 2 of the “snowstorm” here in the St. Louis area. I love making a big pot of chili on snow days. It doesn’t take too much effort, plus at the end of the day… you have a bunch of options to make with your chili. Chili Dogs, Chili Dip, Chili Mac, Frito Pie, or just a nice warm bowl of chili. I play around with my recipes, depending on what ingredients I have on hand. This time I went with a Beef & 2 Bean Chili. See below for more.

 

Super easy recipe. Cool the beef. Add all ingredients, except for the beans. And cook on low for 6-8 hours or high for 3-4 hours.

Then add beans. Turn dial to HIGH and cook for 20 mins. Once the 20 minutes has passed, turn dial down to warm.

Chili tastes great with cornbread. The 20 minutes you’re waiting for the beans would be a good time to pop a pan of cornbread into the oven.

 

Beef & 2 Bean Chili

Brown & Drain:
2 lbs ground beef
Season with salt & pepper

Add to SlowCooker:
1 14.5 oz spaghetti sauce
1 can of petite diced tomatoes, undrained
1 Onion, diced
1 clove minced Garlic
2 T chili powder
1 1/2 t cumin
1/2 t salt
1/2 t pepper

Add after cooking for 20 minutes on HIGH
1 can red kidney beans, rinsed
1 can pinto beans, rinsed

Directions:

1. Brown meat with salt & pepper.

2. While that’s cooking, Dice onions.

3. Add all ingredients, except beans to slow cooker.

4. Add drained beef to slow cooker.

5. Cook on LOW 6-8 hours or HIGH 3-4 hours

6. Turn slow cooker to HIGH (if not, already). Add rinsed beans. Stir well. Cook for additional 20 minutes.

7. Serve & Enjoy

*Tastes great with cornbread

What’s your favorite frozen pizza? Right now, ours is @RedBaromPizza

One of my favorite late-night snacks is pizza. We didn’t feel like ordering anything, so we pulled out one of our frozen pizzas. Right now, our go to is Red Baron pepperoni pizza. The sauce is perfect, the cheese is tasty and melting, and the crust is crispy. This is definitely a hit for the whole fam.

I am looking for some other suggestions of yummy frozen pizzas. I do like to change it up. I will get sick of the same brand or style of pizza over and over and over again. Plus, I have found with frozen sausage and bacon pizzas, the meat doesn’t reheat well. Has a weird porky smell. But pepperoni is where it’s at, and cheese pizza.

I do love that Red Baron carries Deep Dish Singles, as well. These are great for when you need a meal for just one and you don’t wanna waste a big pizza. Also, great for a quick kids meal.

Beef And Black Bean Chili

2 lbs ground beef

Season with salt & pepper

1 14.5 oz Hunt’s Meat Pasta Sauce

1 can of diced tomatoes

1 Onion, diced

1 clove minced Garlic

4 T chili powder

1 t cumin

1 t garlic powder

1/2 t salt

1/2 t pepper

1 can black beans, rinsed

Directions:

1. Brown meat with salt & pepper. Drain.

2. Dice onions

3. Add all ingredients, except beans to slow cooker.

4. Cook on LOW 6-8 hours or HIGH 3-4 hours

5. Turn slow cooker to HIGH (if not, already). Add rinsed beans. Stir well. Cook for additional 20 minutes.

Serve & Enjoy

After a delicious Brat dinner, I feel that my family needs to start trying all of the sausages Johnsonville has to offer. We have been enjoying their sausage for a while now and are just kinda starting to try the flavored sausages and brats.

Tonight, we had a Beef Brat on a split top bun with horseradish mustard. I put two on my little stove top griddle pan and began to grill those bad boys. My husband and I were both loving this brat, down to the last bite. Our five year old ran in and wanted a bite, too!

A few years ago, a friend had turned us on to the Jalapeño Cheddar. This was out of this world. So good. Nice level of heat but not too much.

So now I find myself looking at their product list in their website. Making a list of each flavor or style we need to try.

Slow Cooker Chili

2 lbs ground beef
Season with salt & pepper
1 14.5 oz spaghetti sauce

1 Onion, diced

1 1/2 t cumin
1/2 t salt
1/2 t pepper
1 can dark red kidney beans, rinsed

Directions:

1. Brown meat with salt & pepper. Drain.

2. Dice onions & bell pepper

3. Add all ingredients, except beans to slow cooker.

4. Cook on LOW 6-8 hours or HIGH 3-4 hours

5. Turn slow cooker to HIGH (if not, already). Add rinsed beans. Stir well. Cook for additional 20 minutes.

6. Add cheese (optional). Serve & Enjoy!

If you have 1lb of ground beef, what is your “go to” dish? Spaghetti? Burgers?

Usually, I go for spaghetti or chili. One pound of ground beef and you can have several left over meals. But lately, I’m trying new stuff. Salisbury steak, Meatloaf Wellington… fun new flavors.

I’m looking for new delicious meals to make with 1lb of ground beef.

Recipe: King Ranch Casserole

King Ranch Casserole

1/4 c margarine
1 med. green bell pepper, chopped (optional)
1 medium onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 block of cream cheese (4oz)
1 can Rotel
2 Cups Chicken, cooked and cubed

Yellow corn tortilla chips, crushed
2 c shredded cheese
Sour Cream (optional)

Directions
Preheat oven to 350.

In a Large sauce pan, heat margarine, onion and bell pepper until tender

Add soups, cream cheese, Rotel and chicken. Mix well until cream cheese has melted.

In 9×13 pan layer as follows
Bottom: crushed chips
Layer 2: soup mixture
Layer 3: cheese
Repeat 2-3 times

Bake 30 mins. Serve with Sour Cream (optional)
