Smoked Chicken Drumsticks
Pat chicken dry
Rub all sides of drum with Chicken Rub* (see below).
Put chicken into Ziploc bag or air tight container and place in the fridge until you’re ready to use.
Set Smoker to 275
Once preheated, place chicken directly on rack, in the smoker.
Insert a thermometer probe into the thickest part of one of the drum.
Add Cherry (or apple) wood chips. And do so every 45 minutes.
Cook until temp reaches 183.
Then, I bring into the airfryer and put at 375 for 5-7 minutes. The skin crisps up a bit.
Be careful, it is hot and ridiculously juicy!
4 TB Brown Sugar
4 TB Paprika
2 TB Coarse Salt
1 TB fresh cracker pepper
2 tsp Garlic Powder
2 tsp Onion Powder
1 tsp cumin
1 tsp cayenne
