Pat the chicken down with a paper towel.
Rub both sides of breasts with your Chicken Rub.
Put breasts into Ziploc bag (dish with plastic wrap) and place in the fridge until you’re ready to use.
Set Smoker to 250 and time to 2 hours 45 mins. Allows time for any opening of the door.
Once preheated, place you’re chicken into the smoker.
Add some apple cider to the drip tray.
Insert a thermometer probe into the thickest part of one of the breasts.
Add Cherry wood chips. And do so every 45 minutes.
Cook until internal temp reaches 165.
Remove and cover with foil for 15 minutes.
It is great by itself.
Add some BBQ sauce
Shred. Mix with onions, Mayo and a splash of lemon juice.
Mix until combined.
Chill in fridge.
