Double Chocolate Chip Muffins #Recipe

Today, was day 2 of Snowmageddon here in the STL area. I wanted to make a sweet treat that could be a quick snack or dessert. And I wanted to try something that I hadn’t tried yet. So I looked on Pinterest for the “chocolate cake mix recipe inspiration”. I ran across one particular recipe: DIY Designs Bonfire Style Blog. I had everything here in the house and decided to try it out.

This recipe is super easy and fairly inexpensive to make. I used a store brand devils food cake mix that has worked very well in past recipes. Add a few eggs and some butter. You can use oil instead, but I really feel that butter tastes so much better. And of course, chocolate chips. Chocolate chips make everything better. So I guess add YOUR desired amount.

One trick I found on the DIY Designers Blog is to mix some flour with your chocolate chips to coat them. It helps them not sink to the bottom of the batter and much easier to scoop into the muffin liners.

Double Chocolate Chip Muffins

Ingredients:

One Box Devils Food Cake Mix
3 eggs
1/3 stick of melted butter, OR 1/3 cup oil
Chocolate Chips
1 T flour

Directions:

Preheat oven to 375 degress.

Line cupcake pan with paper liners.

Add chocolate chips to bowl. Add flour. Stir to coat chips evenly. Add remaining ingredients. Mix until well combined.

I used a scoop to place the batter in the liners.

Bake for 18-20 minutes.

Allow to cool before enjoying!
