
Brown Sugar and Cinnamon Pumpkin Seeds
First, preheat your oven to 350.
Cut a 6 inch hole at the top of your pumpkin. Scoop out the seeds and everything else from the inside.
I put everything in a bowl, then grabbed a handful of “pumpkin guts” and began squeezing the seeds out and into a colander. Once I cleaned all the seeds, I ran the seeds under water to get the rest of them cleaned.
Then dump onto paper towels and pat dry. Once they are dry, add to a bowl. Then add 2 tablespoons of melted butter, 1 tablespoon of brown sugar, and 1/2 teaspoon of cinnamon. Mix it all up until each seed is evenly coated.
Line a baking sheet with parchment paper and spread the coated seeds across the sheet.
Bake for 15-20 minutes or until golden brown and crackling.
