
Gooey Butter Bites
Ingredients:
Cake:
1 18.25-ounce box yellow cake mix
1 egg
1 stick butter, melted
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 16-ounce box powdered sugar
1 stick butter, melted
Directions
1. Preheat oven to 350. Lightly grease a 13x9x2-inch baking pan. (I use butter or margarine to coat the sides and bottom of a glass pan, seems to taste better)
2. In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.
3. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump in confectioners’ sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well.
4. Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes (I usually pull it around 42 minutes). Don’t be afraid to make a judgment call on the cooking time, because oven temperatures can vary.
5. Remove from oven and allow to cool atleast 10 minutes. 20 minutes was about right to handle without it being too hot.
6. Then scoop everything into a BIG bowl. Mix it all up and combine evenly.
7. Use a cookie scoop, to form your ball and drop it in a bowl of powdered sugar. Roll around until coated. Set the Bites in a container that has a lid (for when you’re finished).
Hint:
If you want to make the Bites a day before, place the Bites in the fridge overnight. Take them out in the morning and they will be ready anytime. They are actually tasty when they are cold.
