
Mini Banana Bread Loaves
Dry:
1 1/2 cups all-purpose flour
1 t baking powder
1 t baking soda
1/2 t salt
Wet:
3 ripe bananas, mashed about 1 1/2 cups
3/4 cup white sugar
1 egg
1 t vanilla
1/3 cup butter melted
Directions
Preheat oven to 350. Grease and lightly flour the bottom and sides of a mini loaf pan.
Mix dry ingredients in one bowl. Mix wet ingredients in another. Fold in dry mixture into the wet, just until it’s lightly mixed. Don’t over mix.
Fill each mini loaf section 2/3 full
Bake 27-30 mins. Check with a tooth pick. Make sure it comes out clean. Remove from oven. Let sit in pan for 5 mins. Then remove from pan and cool on a cooling rack.

You know, I haven’t tried that yet. They get eaten so fast. I would assume they would last for a couple of months in the freezer.
