Broccoli Salad

I’ve been trying to find a good veggie side dish that my three year old will each without much fight… and this dish is it.

I’ve enjoyed broccoli salads in the past but I’ve found that I’m not a huge raw broccoli fan.

So I decided to try something… use cooled steamed broccoli instead of lettuce for a salad. Add a little cheese and some dressing.

It was a huge hit! My husband loved it and my son ate it! It took a little of convincing the first time, but now… he goes right for it!

Start with steaming the broccoli in the bag in the microwave per directions on the bag.

Cut a small slit in the corner of the bag and drain. Cut open bag and allow to cool, until you can handle them with your hands. Discard big stems. Cut any large pieces into small pieces.

Put broccoli in a bowl or container and place in refrigerator to chill for atleast an hour. (I put mine in a metal bowl, because it chills a little faster)

Add desired amount of ranch and cheese. Mix evenly or put lid back on container and shake until broccoli is coated with ranch.

1 package frozen steam broccoli

Shredded Cheddar Cheese

Ranch Dressing

Steam broccoli per directions on bag. Drain. Cut and remove heavy stems. Put broccoli in a bowl or container and place in refrigerator to chill for atleast an hour. (I put mine in a metal bowl, because it chills a little faster)

Add desired amount of ranch and cheese. Mix evenly or put lid back on container and shake until broccoli is coated with ranch.

Put back in fridge to chill for 30 minutes.

Serve and enjoy!
